Nineteen Signature Natural Oysters
Paired with NV Louis Roederer Brut Premier Champagne - striking a perfect balance between youthfulness and maturity, seduction and character, freshness and vinosity. A blend of around 40% Pinot noir, 40% Chardonnay, and 20% Pinot Meunier, Brut Premier is aged for 3 years in cellars.
White Asparagus, Prosciutto, Cheese Cream, Pangritata, Tarragon
Paired with 2021 Torbreck Woodcutters Semillon - Fashioned with the savoury, food friendly dry whites of Southern France in mind. Although not typically lemony, this wine exhibits more complex aromas of smoked almonds and honeysuckle as well as buttery textures from the natural malolactic fermentation. The palate displays a spicy mineral flintiness with exotic fruit flavours.
Bay Bug Raviolo, Confit Tomato, Shellfish Sabayon
Paired with 2015 Torbreck The Steading Blanc - The Steading Blanc is a seamless wine with a silken texture that can be enjoyed with a rich crustacean based sauce and anything from the sea. Inspired by the rich, luscious and mineral scented dry whites of the Rhône Valley, The Steading – Blanc is ripe, fleshy, barrel fermented Viognier and Marsanne gives the palate a textural edge whilst the Roussanne contributes it’s more flinty and austere personality.
Wagyu Sirloin, Potato Pave, Cauliflower, Black Garlic
Paired with 2019 Torbreck The Struie Barossa Shiraz - The Shiraz grapes for The Struie come from old vines in the Barossa and Eden Valleys. The Eden component brings floral spicy aromas that are supported by more brooding notes of tar and chocolate from the Barossa. The Struie is aged for 18 months in a combination of old and new French oak barriques prior to bottling.
Paired with 2018 Torbreck RunRig Barossa Shiraz - The perfumed and densely concentrated wine is created from a blend of Shiraz and Viognier, derived from eight different dry-grown vineyards. A wine of great opulence, generosity and presence with blackberry and musky violet aromas, supple, velvety tannins and underlying savoury oak. There is a brashness, generosity and ease about the style.
Nineteen Cheese Plate - Monforte, and Mont Priscilla
Paired with 2013 Torbreck The Factor Shiraz Barossa Valley - Spectacular colour saturation displaying an impenetrable inky black core with a very deep black dark purple hue. Lavishly textured and decadently rich the palate delivers extraordinary power with liqueur like concentration, overflowing with flavours of liquorice, ripe blackberries, and dark chocolate. The ripe chewy tannins barely noticeable beneath with a long finish of ripe blackberries, dark plum, liquorice, vanilla oak, dark chocolate, and spice.
