Timothy George, Chef de Cuisine, The Star Entertainment Group

Timothy George, Chef de Cuisine at The Star Entertainment Group is an accomplished and passionate Chef and manager, with an innovative culinary style influenced by his international experience. 

Timothy started his career as a chef in India, renowned for its fresh and fragrant spices, which founded the cultural connection Timothy has with food. At a young age, Timothy observed the role of food and how it connected family and friends. Food became a vehicle to open conversations, drive shared experiences and create memories and moments that extend beyond the meal itself. 

This realisation inspired Timothy’s interest in the food experiences of other cultures, including the different customs, approaches and traditional preparation and cooking methods. When Timothy was offered his first international opportunity at Atlantis The Palm in Dubai, he didn’t hesitate.

He then secured a senior role at leading tourism destination, Armani Hotel Dubai, at the Italian Ristorante, Atmosphere, the world’s highest restaurant. Timothy was selected as part of the pre-opening team to formulate the guest experience. 

Timothy’s fascination with cultural influences on how people eat and respond to food became more profound, and he was able to further develop his culinary skills, immersing himself in some of the most revered international hotels, fostering his pathway and understanding of the experience patrons come to expect. 

This reputation led to his appointment as Chef de Cuisine at Al Qasr and Dam where he managed a team of 60 chefs, and honed his in-depth knowledge about Arab food culture, sourcing local ingredients and understanding traditional approaches. Timothy was selected to cater for the highest of VIP events by the Dubai Royal Family and His Highness. 

As a highly accomplished and results-oriented chef with more than 13 years of experience, Timothy is able to successfully conceptualise, develop, and implement innovative menus to optimise guest satisfaction and retention. He is also accomplished at leading staff training initiatives and ensuring inventory and cost containment. 

Having joined The Star Sydney in November 2017 as Chef de Cuisine, Timothy works under the successful leadership of Director of Culinary, Jason Alcock, and continues to deliver innovative and refined menu fare to reflect the spirit of The Star’s program.
