Scott Bayne joined The Star Sydney five years ago, bringing with him a passion and drive to transform events into experiences and instill the core principles of service into the culture of hospitality. After gathering experience all across the globe, with Westin Resorts and Wynn Resorts, Scott has a strong vision for how The Star can provide exceptional experiences for its guests.

Banquets are out and group dining experiences are in

Our vision at The Star is to create dining experiences that leave a lasting memory for our guests; it’s not simply about serving great food, having great wine and including some amazing AV productions and performances. Whilst all those things are essential to a great event, when you think of your best night out, it is not necessarily the menu or specific wine you recall, but you do remember how the event made you feel. ‘To banquet’ is to become filled; ‘To dine’ is to become fulfilled.

We create opportunities for our whole team to play an integral part in every event, which in turn drives the success of group dining experiences that leave a lasting impression. After all, events are about people gathering and it is the interaction that is remembered.

The guest experience needs to be personal

Our service in The Star Event Centre creates a way for our team to personalise the guest experience. Whether in a room of one hundred or one thousand, we know who will be serving each dish at every seat in the room, which allows us to individualise our services even before our guests arrive. 
We have a boutique restaurant mentality, yet deliver it on a mega scale, personalising it at every opportunity. Our synchronised service throughout the room creates a ‘communal’ group dining experience where no guest is made to feel like they are at the back of the room or forgotten. Be it a special need or just a warm welcome by name, the smallest details are taken advantage of to leave a lasting memory. 

Shifting the perception of hospitality

Hospitality is not just a career, or even an industry; to me hospitality is a philosophy to work and live by. At The Star we are actively working to ensure that a career in hospitality is seen as aspirational for young people.

I believe that you have to establish a culture where every team member feels responsible and takes pride in providing positive guest experiences. It’s fundamental to the success of events. 
In my opinion, leaders drive the culture of a business but it’s our frontline team members who create those memorable guest experiences. If we establish a culture where performance on the job enhances self-esteem then we know we’ve got something special. 

At the end of the day, we're people connecting with people. That's what hospitality is.

In the last 12 months our team has undergone a major training initiative to further develop our guest-centric culture to deliver thrilling and memorable guest experiences. Over $650,000 has been invested in this training program called Star Quality to ensure exceptional service standards in a six star hospitality environment, leading to increased customer loyalty and satisfaction. Almost 2,000 staff have taken part in 16,000 hours of training, enabling both front and at heart of house staff to reflect on their role and long-term career aspirations. 

By participating in these programs, leaders have developed an approach and skill set that empowered their teams to bring their best every day, ultimately leading to greater staff engagement and guest advocacy. Plus staff achievements have been widely celebrated through internal channels and rewarded with accommodation, gift cards and monthly parking, to encourage the use of Star Qualities on an ongoing basis. 

Stellar cuisine backed by the best

When our chefs create each menu, we look to source the best local produce Sydney and the greater regions have to offer. With a team of over 360 chefs from across the globe, our Event Centre truly creates a unique culinary experience for all guests. 

We conduct master classes with our culinary team to keep them up to speed with current local and global trends. These classes support our local businesses while also being a very important educational part of our culinary culture. Our kitchen was designed by chefs, with only restaurant quality cuisine in mind, so you will find one chef behind each ingredient which ensures the highest quality is delivered to our guests. We also look for opportunities to personally tailor our menus in collaboration with our clients as we believe this is an important part of our relationships. 

Over the years we’ve created an exciting “Buyers Own Brand” wine concept. These are premium wines that we can offer throughout our entire range of packages without the associated costs. Our beverage packages are selected with the help of our certified sommeliers, putting together the best NSW and Australia have to offer. 

Our wider wine list offers over 1,500 labels with a focus on old and new world balance, young and old vintages, cult heroes to rising stars, obscure varietals, organic, biodynamic and natural wines. Our sommeliers also assist with customising wine selections to complement any menu. Along with our list of handcrafted cocktails and local craft beers, we have something for everyone. 

In 2016, The Star Event Centre was home to some of the most influential business events in Australia, including the ARIAs, the AACTAs, World Business Forum, charity galas for the Starlight Foundation and Thomas Kelly Youth Foundation, as well as specialty dinners for the Australian Financial Review Top 100 Restaurant Awards and the InStyle Women of Style Awards.
