Celebrate the start of the August long weekend with an exclusive Wynns Winemaker dinner on Thursday 30 August. Join the Wynns team as they present their anticipated release of the Wynns Coonawarra Range, including the 2016 Black Label Cabernet Sauvignon and 2015 John Riddoch Cabernet Sauvignon.
Wynns Coonawarra Estate is the region’s pre-eminent wine producer and largest single vineyard holder with some of the best and longest established vineyard sites in Coonawarra. Its wines are regarded as benchmarks for the district; lauded for both their quality and flavour.
During this one-night-only experience, guests will enjoy four outstanding Wynns wines paired with four delectable courses designed by Chef Song Yao Su. This is one release wine lovers don’t want to miss!

Meet Sue Hodder – Wynns Senior Winemaker
Senior Winemaker, Sue Hodder celebrates her 26th vintage with Wynns in 2018. Sue believes her early viticultural training gave her invaluable insight into the importance of the vineyards in quality winemaking. Sue brings valuable experience with vintages in Margaret River, California and Bordeaux and has judged extensively in regional, national and international wine shows. In 2016 Sue and Sarah were jointly named the ‘Winemaker of the Year’ at the 2016 Australian Society of Viticulture and Oenology (ASVO) Awards for excellence.
Meet Chef Song Yao Su
Chef Song has more than 30 years’ experience working with and perfecting Asian cuisine. Six years spent travelling throughout China broadened his knowledge of traditional dishes, and took him to Hong Kong where he worked alongside world renowned Chef Pui Wing Hui – who to this day is still the most decorated and awarded Chef in Hong Kong.
In 1999, Chef Song was invited by Chef Hui to join him in Las Vegas and work at The Mansion – an invitation-only property managed by and adjacent to the MGM Grand Hotel and Casino. The majority of these high-spend customers were from China, Hong Kong, Malaysia, Singapore and Indonesia. It was here that Chef Song learned to design and prepare custom dishes that would delight individual guests and cater for a wide range of highly-valued clientele.
Chef Song’s appointment to Imperial at The Star (previously Zen) at The Star Gold Coast in 2017 was his first foray into the Australian restaurant scene.
Chef Song’s extensive experience in specific Chinese cuisines has led to an all-inclusive menu with an eclectic mix of flavours and fusion style dishes as well as region specific items including Cantonese, Beijing, Szechuan, Shanghai, Hunan Gourmet, Thai and national native specialties.
