MEET CHEF SONG YAO SU

Chef Song has more than 30 years’ experience working with and perfecting Asian cuisine.
Six years spent travelling throughout China broadened his knowledge of traditional dishes, and took him to Hong Kong where he worked alongside world renowned Chef Pui Wing Hui – who to this day is still the most decorated and awarded Chef in Hong Kong.

In 1999, Chef Song was invited by Chef Hui to join him in Las Vegas and work at The Mansion – an invitation-only property managed by and adjacent to the MGM Grand Hotel and Casino. The majority of these high-spend customers were from China, Hong Kong, Malaysia, Singapore and Indonesia. It was here that Chef Song learned to design and prepare custom dishes that would delight individual guests and cater for a wide range of highly-valued clientele.

Chef Song’s appointment to Imperial at The Star (previously Zen) at The Star Gold Coast in 2017 was his first foray into the Australian restaurant scene.

Chef Song’s extensive experience in specific Chinese cuisines has led to an all-inclusive menu with an eclectic mix of flavours and fusion style dishes as well as region specific items including Cantonese, Beijing, Szechuan, Shanghai, Hunan Gourmet, Thai and national native specialties.
