A French Connection

Bistro 80 at The Star. The cuts speak for themselves, as will The Ocean Shelf when you sneak a peek. Head chef Paul Gaspa unveils his colourful array of fresh seafood including shellfish and caviar over ice, freshly shucked oysters, crabs, prawns and succulent Moreton Bay bugs.

Everything from The Ocean Shelf and The Grill is cooked simply allowing the true flavours to sing.

The signature dishes? Steak and béarnaise sauce, veal jus, mustard selection and Murray River salt; Risotto of Queensland snapper crab with sweet corn and baby herbs; and Fish and Chips with baby peas ‘French style’ and tartare sauce.

Paul Gaspa

Chef Paul Gaspa holds a wealth of culinary experience specialising in French cuisine. Fresh from a stint at Crown Melbourne via many of the world’s great restaurants, including the Lanesborough in London, the Michelin-starred Conrad Hotel in Tokyo and the Al Mahara Restaurant at the iconic Burj Al Arab Hotel in Dubai, Gaspa embraces seasonal produce to deliver classic home style dishes, with a modern twist.
