The Echo Culinary Institute (ECI) has been created by some of the best in the Chef business, setting a new standard for apprenticeship programs, dedicated to training and mentoring those who will be building the future of cooking.
ECI provides a dynamic, friendly, and supportive environment for Apprentice Chefs to achieve and excel. We are seeking candidates with a positive outlook, team player mentality, hard working attitude, a natural flair for flavour and ingredients, and an innate understanding that it’s being a chef is a way of life. In return, we provide off-job training developed in consultation with industry experts, and prospects for future work placement at some of Australiaʼs top culinary and entertainment destinations.
Your apprenticeship will see you undertaking work placement at one of Echo Entertainment Group properties: The Star Hotel & Casino (Sydney), Jupiters Hotel & Casino (Gold Coast), Treasury Casino & Hotel (Brisbane) and Jupiters Hotel & Casino (Townsville).
Over the course of a three year program, you will be in the company of fellow students with the same ambition as you. You will be learning cooking methods such as soups, stocks and sauces, butchery, fish-mongery, wood-fired grilling, pasta, pizza, wok cooking, sushi, sashimi, chinese roasts, and pastry & baking.
